I am getting so excited for the long holiday weekend, I have already started doing a little baking to get in the 4th of July spirit. The past few years Jonny and I have hosted big BBQ's and parties over the holiday, but this year is going to be a little more low key and these little guys will be perfect to pack up and take up to the cabin (warning they are little so it's ok to have more than one... at least that is what I have been telling myself - hehe).
This is what I did:
Ingredients:
- cherry pie filling (you don't need very much)
- pie crust (I used Williams-Sonoma Pie Crust mix - Pillsbury works great too!)
- 1/4 cup sugar
- 1 egg
- frosting
- blueberries
Instructions:
- preheat oven to 425°
- roll out dough
- cut circles using 4' buscuit cutter
- in mini muffin tin, scoop about 3 cherries in each cup
- sprinkle sugar in each cup to sweeten :)
- using small cookie or pie crust cutter cut star (or shape) in remaining dough
- make egg wash mixing egg with 1 tblsp. of water
- brush each star with egg wash and place on top
- bake for 10 minutes or until golden brown
- cool
- I also added frosting and blueberries on each one, which taste delicious, but don't look quite as pretty :)
